8 – Flounder fillets
2 – Eggs, beaten
1 cup – Spinach, cooked
8 Tbs. – Matzo meal
8 slices – Tomatoes
Salt and pepper
Butter or margarine

Drain and chop spinach, mix with egg, matzo meal and seasonings. Divide mixture on fish and roll up. Place a tomato slice on each roll, secure with toothpick if needed. Place fillets on well greased baking dish. Dot with margarine, bake for 30 mins at 350.
